The Cut and the Chain

Walk the price of meat from farm to wholesale to grocery retail — beef, pork, broiler, monthly since 1970, in cents per pound of retail equivalent. The reveal: almost the entire farm-to-retail markup lives in the wholesale→retail leg — downstream of where a kitchen buys. Retail here is USDA ERS national-average grocery retail, never a delivered, invoice, or menu price.
