When to use it

Pull this sheet out when —

  • Last day of the period, after the close, two people walking together.
  • Whenever the prime cost number reads off and you suspect a count miss.
  • Before a vendor switch — start the new vendor at a known opening number.
Common mistakes

What operators get wrong

  • Counting sealed cases as open weight. A case of #10 cans is not the same line as opened pulls.
  • Counting in random order. The next person who recounts has to do it the same way.
  • Skipping the bar walk-in because "beverage is small." Beverage is where the highest-margin theft hides.
