Common mistakes

What operators get wrong

  • Updating the menu but not the matrix. The lag is where allergen incidents happen.
  • Conflating "contains" with "may contain" (cross-contact). The grid needs both columns.
  • Using a Google search to fill in a hidden ingredient. Verify with the supplier spec sheet, every time.
