When to use it

Pull this sheet out when —

  • Twenty minutes before doors open — lunch and dinner separately.
  • When the previous shift's manager left a note about a temp-log gap.
  • Right after a vendor delivery so you catch a temperature problem before service.
Common mistakes

What operators get wrong

  • Initialing without checking the temps. The walk is the point; the signature is the proof.
  • Not dating the printout. Health inspectors want the date, not just the day of the week.
  • Putting the 86 list in the manager's pocket instead of expo. The line cannot read your pocket.
